Cabernet Sauvignon, often referred to as “The King of Wine Grapes”, is the topic of our upcoming installment of Wine Wednesday on this coming Wednesday, September 1st at 7:00 p.m. Eastern/New York time. One of the Noble Grapes, “Cab Sauv” is representative of so many stylistic interpretations owing to “place” and “winemaker preference”. An offspring of a natural crossing between Cabernet Franc and Sauvignon Blanc (hence, the name “Cabernet Sauvignon”), this revered grape can portray Old World or New World styles, as well as some that bridge those two styles.
What version of Cabernet Sauvignon represents your particular preference? Is it the higher acid and lower alcohol content of the traditional Old World style, or do you enjoy a more full-bodied “big, bold, and fruit forward” style of a New World portrayal from, say, Napa? There are regions that perhaps should not insist on growing this grape due to their lack of sunlight and heat. Or, will those regions have the last laugh as climate change smiles on their fortunes with more heat and sunlight?
